Chicken Dorito Casserole

I posted this once before but I am re-posting because the link I gave previously to my recipe for this has been removed from the site it was on.

I am going to be posting quite often here with new recipes and random ramblings. 

Let's get to the recipe shall we? 





What you will need:

4-6 cups cooked chicken, chopped (I used a rotisserie chicken)
2 cans cream of mushroom soup
2 can cream of chicken soup
2 cans Rotel tomatoes- do not drain
1 can of corn, drained- optional
2 cups Mexican cheese, shredded
2 cups Sharp Shredded Cheese
1 bag of Nacho Cheese Doritos
Half of Green bell pepper chopped
1 Bundle green onions- chopped
2 tbps Butter


DIRECTIONS:
Preheat oven to 350 degrees.
Saute Onion and Bell Pepper with the butter in skillet

Lightly spray a 9x13 pan with cooking spray (I use a deeper throw away pan from the grocery store but either is fine).  Crush the entire bag of Doritos and cover the bottom of the dish with half of the bag of crushed chips.  Reserve one cup ( maybe a bit more if you like it cheesy) of cheese (for the top).   Mix together remaining ingredients in a large bowl.  Pour half chicken mixture over the Doritos then top with cheese to cover. Repeat with second half of doritos, followed by second half of chicken mixture and top with remaining cheese. Bake for 45 min COVERED, remove from oven and uncover then bake an additional 10 minutes.

Meet Sophie-Cuteness Overload!!

This is the newest addition to our family. She is a breed called the "Chiweenie" A mixture of Chihuahua and Dachshund.  Very loving playful pups. 

This is the first of many announcements coming this week. This one just happens to be my sweet distraction. Show her some love!!

Attention Attention!!

As you may have already noticed my blog is undergoing a revamping. I have new things coming (new addition to the family and a new addition business wise) and wanted to get it going with a new and fresh perspective! I am excited and hope that you will be too! I will be making my formal announcement of the things to come next week! Stick with me guys just a few more days!

Surprise!!

I mentioned previously that new things are coming, well one new thing has arrived.



I am beyond excited about this one! For years and years everyone in my family has been in the sewing business in some form or fashion. My Dad was a machinist and also did some sewing himself for over 35 years. I guess it's in my blood. Therefore, I decided I have fought it long enough. 

As a photographer and a mother I know how expensive it gets purchasing new props and children's clothes in general. So I decided I will use this as an opportunity not only to start a new venture in business but to use it as a way to stay "close" to my Dad. I have only had this machine a few days and I have found myself saying out loud more times than I can count in the last few days "I wish my Dad were still here." 

I will post projects as I go along and when I get ready to open my store I will make the announcement here also. Right now I am working on a couple of pillow case dresses and newborn prop sets! I am loving them so far!
